Hold the pasta. Bring on the nuts, the scrambled eggs. Dr. Walter Willett, Chair of the Nutrition Department at the Harvard School of Public Health, says the much-touted, low fat, high carbohydrate diet is making you fat.

His controversial findings were presented to the 16th International Congress of Nutrition, which opened in Montreal drawing 3000 nutrition experts from around the world. They spent a week looking at everything from herbal medicine to genetically modified foods. Why is it, he asks, that North Americans are growing fatter at an alarming rate while food shelves are groaning with low-fat products and fat intake has been going down?

His research led to a nagging suspicion: Low-fat diets might be making people fat. People have been forsaking good fats in favour of rice & pasta in the mistaken belief that as long as they‘re eating carbo’s, they won’t add inches to their waistline, Willett said. While everyone worries about saturated fat, which is found in meat and dairy products, he said there is a much worse culprit lurking on supermarket shelves: transfatty acids. You won’t see those words on food labels as they are sugarcoated with names like hydrogenated oils and shortening.

The number one immunological organ in your body is your colon. It contributes to good health, vitality, and longevity. Cancer of the colon and rectum (Colorectal Cancer) is the second most common form of cancer overall in the United States (exceeded only by lung cancer). Less obvious results of accumulated toxic waste in your colon are tumours, cysts, polyps, fibroids, and high cholesterol. As your eating habits worsen, so does your elimination efficiency. Many, if not most, of the list of disorders mentioned are characteristic of modern Western civilization. Available evidence suggests that most, if not all of these disorders were rare or uncommon in the Western world less than one hundred years ago and that the prevalence of each has greatly increased during the last 50 years. Researchers (such as Cleave, Trowell, Burkitt, and others) have known these diseases are almost unheard of in the communities that still adhere to their traditional way of life. In developing countries in Asia and Africa, for example, documented evidence has proven the rarity of diseases such as diverticular disease, appendicitis, bowel cancer, adenomatous polyps (multiple glandular tissue overgrowths), ulcerative colitis, varicose veins, deep vein thrombosis (clots), pulmonary embolism, hemorrhoids, and hiatus hernia, appendicitis, ischemic heart disease, diabetes, gallstones, varicose veins, venous thrombosis, and hemorrhoids.

But as these countries develop and begin to adopt Western customs, a rise in the frequency of these disorders follows almost just as surely as night follows day. They first appear, and then become common, in the upper socioeconomic groups and in the more urbanized communities (which are, of course, the first groups to become “Westernized"). For example, this has been the case in Africa and then in Japan since World War II, particularly in the urban communities. As a result of years of investigations, the evidence supports not an environmental factor, but what the researchers say is the "F-Hypothesis" (‘F' for fibre).

After a 25-year study of over 5,000 cases, the New York People's Hospital stated that “every physician should realize the intestinal toxemia is the most important primary and contributing causes of many disorders and diseases of the human body” and that “one must note that such toxemia is at the root of more problems than commonly imagined or suspected”.

In the past it was thought the large intestine was not really involved in absorption (the principal absorptive functions being to conserve water and electrolytes secreted into the gut during digestion). However, recent research has demonstrated that the colon does also participate in protein absorption, among other things.
Toxic Megacolon

his is extremely significant as the colon is the major exposure site most of the endogenous bacterial proteins, enterotoxins, and the breakdown-antigens, which may be involved in the origination and development of a number of diseases—including ulcerative colitis and Crohn's disease, food allergies and allergic gastoenteropathy, bacterial enteritis (from toxins produced by Escherichia coli, Shigella, or Vibro cholerae, etc.), and certain extra-intestinal immune-complex diseases.

Immune disorders, resulting from the interaction of circulating antibodies with absorbed antigenic protein (particularly those bad bacterial breakdown-antigens originating in the colon), have been implicated in the development of even some forms of chronic active hepatitis, glomerulonephritis (a kidney problem), myocarditi (inflammation of heart muscle), and also the arthritis that is associated with inflammatory bowel diseases. Even a role in the origins of celiac disease and of collagen-vascular diseases (such as systemic lupus

erythematosis) has been suggested. As research continues, the bowel-toxemia ‘you-need-to-keep-the-sewer-pipes-open' school will be completely vindicated as correct.

As we live, we pour a lot of toxins down our gullets and our bodies do not always handle them well so they accumulate. Unfriendly microbes, non-utilized foods, toxic metals and chemicals, and carcinogenic agents can get gummed up inside our digestive tracts and begin to cause problems. Of course if we smoke or use alcohol, we are accumulating considerably more toxins.

Changing your diet may result in misunderstanding as to what is going on in your body; because sometimes the symptoms are similar to those felt in other health issues. To help in understanding, let's look at playing softball with your kids. If you have not been getting regular exercise, the day after this activity you might not feel so good—tired, sore muscles, stiffness, etc. This is your body reacting to something it is not used to doing. You may also see this same thing when stopping a regular activity—such as if you are a soda pop drinker and stop, you may notice you have less energy or even a headache—your body is reacting to your decision to change .

Before Lipase can digest fat, bile (an emulsifier or degreaser) must break down the fat into smaller units. People who are low in HCl cannot make adequate bile for this complete
process. As these are inter-related, lipase and protease deficiencies also contribute to low HCl. Lipase is beneficial in chronic inflammatory conditions, lymphatic swelling, joint pain with swelling, or acne. Excellent results are experienced when used in weight management programs. Lipase deficiencies may show up as psoriasis, gallstones, cystitis (bladder infection), heart problems, incontinence, diarrhea, etc.Faulty fat digestion in the digestive tract because of poor lipase activity is often a factor in cardiovascular diseases, such as the cholesterol that is similar to fat which can clog arteries. The fat in animal and fowl tissue contains lipase, as do some plants such as avocados and coconuts. However modern butter, for example, lacks the lipase of unpasteurized butter. In fact, fat in human obesity and in fatty tumors contain less lipase than does normal fatty
tissue! When fats are eaten along with their associated enzymes the arteries and heart do not suffer.

Cellulase increases intestinal absorption of nutrients and is intended for ingestion between meals. It digests soluble fiber that is eventually converted to glucose. It is the only enzyme that our bodies cannot produce, therefore it must be obtained from food sources (all raw fruits, veggies, whole grains), or from plant-based enzyme supplements. It may be beneficial in cases of food allergies, toxicity, chemical blockage, mental fog, metal taste in mouth, liver swelling/pain, drug withdrawal, inability to digest raw foods and nuts, a yeast overgrowth from sugar intolerance (helps digest yeast-fungi), and pain syndromes. Cellulase helps to digest certain neurotoxins in the colon that would cause facial pain or facial paralysis (Bell’s palsy). Realizing this gives us the knowledge to reverse our dis-ease conditions by improving our daily dietary habits.So, let’s look at the differences between ‘fired-foods’ and living raw foods. Upon cooking, proteins, fats, and fibre,
though still present are seriously altered. Some vitamins and minerals may be replaced by fortification duringprocessing stages. But what about the naturally-occurring enzyme factors naturally found in all foods before cooking,processing, or preservation? Research has proven that heating at temperatures above 118 degrees destroys virtually all
naturally-occurring enzymes in food! And as society continues to suffer the effects of an enzyme-deficient diet, wesee it is too costly to our health and quality of life to ignore the negative effects of ‘dead’ food.

Enzymes power all physical movement, regulate organ function, generate the immune system, and help to digest our food. Even thinking and breathing depend on enzymes! However, in the absence of enzymes, any remaining undigested material bypasses the uptake sites (villi) in our small intestines, collecting in the colon. Enzymes called from the pancreas by the pituitary gland are soon exhausted, leaving undigested foods to bacterial toxic breakdown and putrefaction—producing toxic byproducts! These toxic by-products are then re-absorbed by the body, creating an even greater strain on an already overtaxed system (referred to as intestinal toxemia, which is associated with aging, degeneration and disease). Our livers, when working well, remove many of these harmful toxins, only to empty them directly back into the intestine! Toxins not handled by the liver get released for general circulation throughout the body.
Proteins are the building blocks for the body and are necessary for the transport of vitamins and minerals to the bloodstream, and are required in order for the body to make hormones and enzymes. A weakened pancreas fails to deliver the necessary proteins to the needed areas, contributing to degeneration. Without utilizable forms of protein, our bodies must use raw materials from our inner sources (catabolism) in order to function. An extensive study by Dr. Henry Pottenger revealed that ‘enzyme potential’ is passed in genetic structure from one generation to the next. Groups of cats fed only raw enzyme-rich foods passed their abilities for high potential levels of enzymes to their younger generations. While groups fed only cooked enzyme-void foods rapidly deteriorated and passed their deterioration into the genetic structure of their offspring. Quite clearly, adequate levels of enzymes are
essential in order for our bodies to utilize proteins, vitamins, and minerals. Enzymes truly are the KEY to life!

Assist your body by eating more fresh, raw and living foods, preferably in season and hopefully grown locally; buying foods with a “fresh” smell (as in tomatoes); trying to buy rganically grown foods, buying the “whole” fruit or vegetable instead of cut food where enzymatic changes have been initiated. Every time you eat you can do something good for your health. You can always use your food as medicine. The food we eat changes our weight, mood and our outlook on life. The old saying still rings true.. We literally are what we eat. And eating is one thing we have control over every day for our health. Here are three (3) important tips to help you get started:

Promise yourself whole foods for your healing diet. Whole foods keep you whole. Today, we live in a man-made jungle of food substances instead of foods – many of them highly processed, devoid of nutrients, chemical-laced, sugar-drenched and full of hidden fat. Eat whole grains rather flour products; focus on fresh organic fruits and vegetables for healing enzymes and nutrients. Eating out of a box or eating lots of chemically treated, microwaved foods on a regular basis doesn’t give your body what it needs. These foods only add to the toxic burden already on your body.

Go organic. Organically grown foods are popular and easily available today. Organic food sales totaled $2.4 billion in 1995 and the market is growing 25% each year. Soils that aren’t treated with synthetic chemicals grow healthier plants that taste better and contain more nutrients. Organic food almost certainly helps protect you from cancer. We’ve known this since the 80’s. A 1987 study by the National Academy of Sciences showed that pesticides on commercial product probably cause up to 1.4 million cancer cases in Americans. Sadly, our children are affected first. The average U.S. child receives 4 times more exposure than an adult to cancer-causing pesticides in food!

Eat with the seasons you live in. If you look closely, you’ll find that Nature provides what is needed for each part of the year-fruits in the summer for cooling, and root vegetables in the winter for building, Eating fruits and vegetables as they are harvested in your own area is a wonderful way to keep a closer touch with where you are and who you are.

Get Back To Nature With Whole Foods
